Pepper and Tomato Compote Recipe

Made by my husband

Can be served cold or warm as a starter or a side dish with fish or meat

Ingredients for 4 people:

  • 3 mid-size tomatoes
  • 3 peppers: red, green and yellow
  • 2 table spoons of Olive oil
  • 2 cloves of fresh garlic
  • Salt & pepper to taste

Steps to make the compote:

  • Heat the oven up to 200 degrees. Place peppers and tomatoes in the oven for 5 minutes until skin softens, begins to burst or turns slightly black.
  • Take the vegetables out of the oven and remove the skin
  • Cut peppers in long strips about 1-1.5  cm wide and remove the seeds
  • Cut tomatoes in 4 or 6 parts and remove the seeds
  • Heat the olive oil in the pan, crash fresh garlic with back knife, and simmer garlic for a few minutes
  • Add peppers, tomatoes, salt, pepper and cook gently for 20 minutes stirring occasionally
  • After 20 minutes raise the heat, cover the pan with the lid and simmer to reduce liquid according to taste
